Makhani Handi

Ingredients:

  • 1 kg chicken, cut into pieces
  • 1 cup cream
  • 1/2 cup heavy cream
  • 1/4 cup ghee
  • 1/2 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 inches ginger, minced
  • 1 tomato, chopped
  • 1 tablespoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 tablespoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon salt

Instructions:

  1. Heat the ghee in a handi over medium heat and add the onion. Cook until golden brown.
  2. Add the garlic and ginger and cook for 1 minute.
  3. Add the tomato and cook until softened.
  4. Add all the spices and cook for 1 minute.
  5. Add the chicken and stir to coat.
  6. Add the cream and heavy cream.
  7. Cover the handi and cook on low heat for 30 minutes.
  8. Serve makhani handi with rice or roti.

Tips:

  • Cook the chicken until tender.
  • Adjust the amount of cream and heavy cream to your taste.
  • Cooking makhani handi in a handi enhances its flavor.
